Recipe

Kira made this Harumi Kurihara recipe for me since I'm feeling puny. The skin on the chicken is optional - the sauce should keep it moist. I'm posting this because, despite the number of ingredients, it's pretty simple and it's one of the most awesome things I've ever turned into poo.

Chicken and French Beans with Basil Rice
鳥あどぼふ
(serves 4)

1 lb boneless chicken thighs with skin
pepper
4 cloves garlic
12 oz French beans
1/2 tbs sunflower or vegetable oil
1/2 cup rice vinegar
1/4 cup sake
1 1/2 cups water
1/2 cup soy sauce
1 bay leaf
1 tsp ground coriander
4 hard-boiled eggs (shelled)

  1. Cut the chicken into 6 pieces. Season lightly with pepper. Peel the garlic cloves.
  2. Remove the strings from the beans, trim the ends and then lightly boil or steam. Drain while the beans are still very firm. Cut each bean into 3.
  3. Heat the oil in a wok or frying pan or wok over medium heat. Add the garlic and when its aroma is released place the chicken, skin side down, into the pan. When the skin turns golden brown, turn and brown the other side.
  4. Add the rice vinegar, sake, water, soy sauce, bay leaf, and coriander to the pan and simmer at low to moderate heat.
  5. When the liquid has reduced by half, add the boiled eggs and beans. Simmer for five minutes and serve.

Basil Rice

2 handfuls of fresh basil
2 tbs sunflower or vegetable oil
2 tbs finely chopped garlic
2 cups hot cooked rice (preferably Japanese)
1 tsp granulated chicken stock
salt and pepper

  1. Roughly chop the basil.
  2. Heat the oil in a frying pan over moderate heat. Add the garlic and fry gently. When you can smell the garlic, add the cooked rice and fry until heated through. Season with the granulated stock, salt, and pepper. Turn off the heat and mix in the basil. Serve immediately.

That DID turn out really well. Ariana keeps requesting it now. I loved that basil rice in particular. Yes, I think that the skins are optional, but I do think that this recipe will work best with dark meat rather than white, so sticking with the thighs is good. You can also use regular green beans, but the nice, thin, haricots verts (French green beans) are better (just more expensive here).

Stick with the dark meat. Fry it 'til it's truly crispy and don't turn the meat over, baste it with the oil from the pan and you will have some very tender, juicy chicken

messiah - my official role is eater, not cooker, but I'll pass your request to the chef. Also I'll trade you 50 dollars or looneys for all my outstanding hospital bills. Health care in America is, um, free. Yeah, that's it. Just like our education and gasoline.

kira - that's why I leave the cooking up to you. Call me if you make it for Ari and I'll show up for dinner at 3 AM when I'm wide awake.

nyd - I don't like to cook anything more complex than tea which is why the Great Magnet put Kira into my life (see her comment above).

mq - this isn't traditional Japanese food, it's a Harumi Kurihara (kind of the Japanese Martha Stewart) East / West hybrid. It's fantastic, though - I definitely recommend it.

joe - it's almost easy enough for me. Check back in a day or two for a recipe that actually is easy enough for me.

ssc - the younger schoolgirls have shorter legs and are easier to lure with candy.
